  • 6 eggs, hard boiled, halved
  • 1 carrot, peeled, grated
  • 2 green onions, minced
  • Dressing
  • 1 tablespoons dill, fresh, minced
  • 1/2 teaspoon dill, dried
  • 2 tablespoon parsley, fresh
  • 1/2 teaspoon parsley, dried
  • 1 tablespoon caraway seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground, to taste
  • 6 ounces sour cream (3/4 cup)
  • 3/4 cup mayonnaise

How to Make

  • Step 1: Boil potatoes in heavily salted boiling water until tender, drain.

  • Step 2: Cut in half and cool.

  • Step 3: Combine eggs, potatoes, carrots, and green onions in a large bowl.

  • Step 4: Dressing: Add dill, parsley, caraway, salt, and pepper and gently toss to combine.

  • Step 5: Mix in sour cream and mayonnaise and add to herbs.

  • Step 6: Gently fold into the potato mixture.

  • Step 7: Refrigerate salad overnight.

  • Step 8: Add more mayonnaise if needed.
