Ingredients

The ingredients are:
  • 1 tablespoon oil
  • 2 pounds pork chops, bone in (4)
  • 1/2 cup evaporated milk
  • 1/4 cup bread crumbs, dry, fine
  • 15 ounces cream style corn (1 can)
  • 15 ounces corn, drained (1 can)
  • 2 eggs, beaten
  • 4 tablespoons onion, minced
  • 3/4 teaspoon salt
  • 1/4 teaspoon celery salt
  • 1/8 teaspoon pepper
  • Garnishes
  • 1 tablespoon green olives, stuffed, sliced
  • 1 tablespoon parsley, fresh, minced

How to Make

  • Step 1: Preheat oven to 325F.

  • Step 2: Heat oil in a frying pan and brown seasoned chops on both sides, cover chops while browning.

  • Step 3: Pour off fat (or not).

  • Step 4: Season chops to taste.

  • Step 5: Pam spray baking dish before adding chops.

  • Step 6: Arrange along sides of 5 or 6 cup baking dish not over 2″ deep.

  • Step 7: Mix crumbs, milk, corns, eggs and seasonings in pan in which chops were browned.

  • Step 8: Pour into baking dish over pork chops.

  • Step 9: Bake for about 45 minutes. or till sharp knife inserted in center comes out clean.

  • Step 10: Garnish with olives and parsley.
