Step 1: Preheat oven to 450 degrees F.
Step 2: Wrap the pita breads in aluminum foil and heat in oven for 10 minutes.
Step 3: Meanwhile in a skillet on medium high heat sear the sausages (5 minutes per side); remove from heat and let rest for 5 minutes; slice each sausage in half crosswise.
Step 4: Remove pita breads from oven and halve each crosswise to make pockets. Stuff each half with one sausage half and some diced tomato and sliced onion along with a dollop of yogurt (or tzatziki sauce) and then garnish with parsley. Repeat with remaining pita breads and other ingredients to make 8 half sandwiches.
