Ingredients

The ingredients are:
  • 1 tablespoon cumin seeds, ground
  • 1 tablespoon mustard seeds, ground
  • 1 tablespoon coriander seeds, ground
  • 2 pounds pork loin, boneless, tied
  • Kosher salt
  • Pepper
  • 3 tablespoons olive oil
  • 8 slices pumpernickel bread (or your favorite dark bread)
  • 1/2 cup apple butter
  • 1/4 cup mustard, coarse grain

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a bowl combine the ground spices (cumin - coriander) and then with your hands pat the spices all over the pork and then sprinkle with salt and pepper.

  • Step 3: In an ovenproof pan on medium high heat heat the olive oil. When hot add pork and sear it on all sides; place pan with the pork in the oven and roast for about 40-50 minutes or until meat thermistor registers 145 degrees F and then remove from oven and let cool to room temperature.

  • Step 4: Cut the pork into thin slices.

  • Step 5: For each sandwich spread apple butter on one slice of bread and the mustard on the other slice of bread; then pile the slices of pork on one side of bread and top with the second slice of bread. Repeat process to make 4 sandwiches.
