Step 1: In a saucepan on medium heat add the milk, honey and salt and bring to a boil; lower heat to low and simmer for 30 minutes. Whisk in the eggs in a separate bowl.
Step 2: Preheat oven to 350 degrees F.
Step 3: Stir hot milk into the eggs and then pour mixture through a strainer into a 4-cup measuring cup.
Step 4: Set ramekins into a large baking dish and then divide mixture among the ramekins. Pour boiling water into the larger baking dish to come up to about an inch up the sides of the ramekins. Sprinkle nutmeg over the top of the custards.
Step 5: Bake for 45 minutes or until custards are set (a knife inserted in center should come out clean). Remove from oven and take the ramekins out of the water. Let cool to room temperature and then refrigerate.
