Step 1: Preheat oven to 375F.
Step 2: In bowl, combine flour, onions, sugar, baking powder, baking soda, salt, pepper and caraway seeds. Combine buttermilk, oil, 1/2 cheese and egg.
Step 3: Pour over dry ingredients and stir just until moistened.
Step 4: Spoon into 8 greased or paper-lined muffin cups. Sprinkle remaining cheese evenly over tops.
Step 5: Bake in center of oven for 20 to 25 minutes or until golden and firm to the touch.
Step 6: Let cool in pan on rack for 5 minutes.
Step 7: Serve warm. (Make ahead: Store in airtight container for up to 1 day or freeze for up to 2 weeks.)
