  • 1 1/2 cups flour
  • 2/3 cup green onions
  • 2 teaspoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon caraway seeds
  • 1 cup buttermilk
  • 1/4 cup oil
  • 1 egg, lightly beaten
  • 6 ounces Monterey jack cheese, shredded (2/3 cup)

How to Make

  • Step 1: Preheat oven to 375F.

  • Step 2: In bowl, combine flour, onions, sugar, baking powder, baking soda, salt, pepper and caraway seeds. Combine buttermilk, oil, 1/2 cheese and egg.

  • Step 3: Pour over dry ingredients and stir just until moistened.

  • Step 4: Spoon into 8 greased or paper-lined muffin cups. Sprinkle remaining cheese evenly over tops.

  • Step 5: Bake in center of oven for 20 to 25 minutes or until golden and firm to the touch.

  • Step 6: Let cool in pan on rack for 5 minutes.

  • Step 7: Serve warm. (Make ahead: Store in airtight container for up to 1 day or freeze for up to 2 weeks.)
