Step 1: Drain liquid from sauerkraut (it may be washed off and drained, and once again if it is too sharp).
Step 2: Add caraway to taste, and enough water to cover.
Step 3: Grate the potato on the smallest side of a hand grater.
Step 4: Cook 20 to 30 minutes.
Step 5: Sauté onion in a small amount of bacon grease until onion is light brown.
Step 6: Seasoning lightly, and add flour and sugar, and cook for 5 minutes and add to sauerkraut.
Step 7: Cook for an additional 10 minutes.
Step 8: Season to taste.
