Ingredients

The ingredients are:
  • 1/2 cup olive oil
  • 1 onion, diced
  • 2 pounds spinach, chopped
  • 2 tablespoons mint leaves, chopped
  • 2 1/2 cups water
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup long grain rice, uncooked

How to Make

  • Step 1: In a saucepan over medium heat heat the olive oil and then add the onion and cook, stirring frequently for 5 minutes or until softened. Stir in spinach and mint and cook for another 3-5 minutes or until spinach is wilted.

  • Step 2: Stir in the water, tomato paste, salt and pepper and bring to a boil and then add the rice; cover; reduce heat to low and simmer for 20 minutes or until rice is tender and water has been absorbed.
