Step 1: In a saucepan over medium heat heat the olive oil and then add the onion and cook, stirring frequently for 5 minutes or until softened. Stir in spinach and mint and cook for another 3-5 minutes or until spinach is wilted.
Step 2: Stir in the water, tomato paste, salt and pepper and bring to a boil and then add the rice; cover; reduce heat to low and simmer for 20 minutes or until rice is tender and water has been absorbed.
