Ingredients

The ingredients are:
  • 1 1/2 pounds Yukon Gold potatoes (or your favorite potatoes)
  • Kosher salt
  • 1/4 cup mint leaves
  • 3/4 cup cilantro leaves, chopped
  • 1 garlic clove, minced (about 1 teaspoon minced garlic)
  • 2 teaspoons ginger, minced
  • 1 teaspoon serrano chile, chopped (or substitute 1 1/2 teaspoons jalapeño, chopped)
  • 1/2 teaspoon cumin, ground
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon sugar
  • 2 tablespoons lemon juice
  • 1/4 cup mayonnaise
  • 1/3 cup scallions, sliced on the diagonal (optical garnish) or 1/2 cup pickled red onions, chopped (optional garnish)

How to Make

  • Step 1: To prepare the potatoes: peel the potatoes and cut them into 1 inch chunks and then place them in a saucepan with enough water to cover by an inch; add kosher salt and then bring to a boil over high heat; reduce heat to medium low and simmer for 10-15 minutes or until done (when they can be pierced with a knife); drain in a colander and let cool completely.

  • Step 2: To make the dressing: chop mint and cilantro as fine as possible and place them in a bowl along with the next 8 ingredients (garlic - mayo); stir to combine. Season with salt and lemon, if desired. Set aside.

  • Step 3: Just before serving, in a large bowl combine the potatoes with the dressing, stir to combine well. Top with chopped pickled onion or the chopped scallions.
