  • 1/4 cup dry sherry
  • 1/4 cup dark brown sugar, packed
  • 1/4 teaspoons salt
  • 3 tablespoons apricot jam
  • 2 tablespoons butter, melted, cooled
  • 2 tablespoons lemon juice

  • 1/4 cup raisins
  • 4 bananas, peeled, cut lengthwise into halves

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Pam spray pan heavily maybe butter it too.

  • Step 3: Mix everything except bananas.

  • Step 4: Put bananas cut side down, single layer, in a pan only large enough to hold them snugly like that.

  • Step 5: Sprinkle on raisins.

  • Step 6: Pour sherry mixture over them evenly.

  • Step 7: Bake for 30 minutes or until completely tender. Serve at once, from baking dish.

  • Step 8: Also be careful not to leave it in the oven too long because the sauce will soon become hard and stick to the pan.
