Ingredients

The ingredients are:
  • 12 ounces skirt steak
  • Kosher or coarse salt
  • Pepper
  • 2 tablespoons vegetable oil
  • 4 pita breads
  • 8 ounces cheese, shredded (your favorite or Monterey Jack,cheddar, Muenster, or mozzarella or a combination of different types of cheese) (this is 2 cups cheese)

How to Make

  • Step 1: Cut steak into 4 pieces and sprinkle with salt and pepper.

  • Step 2: In a skillet on medium high heat, heat the oil until hot and then add the steak and cook for 2 minutes per side or until browned. Remove from heat and let rest for 5 minutes.

  • Step 3: Slice steak across the green and then cut into bite size pieces; set aside.

  • Step 4: Heat a skillet or griddle over medium heat and then heat the pita bread for about 1 minute per side. Cut them open to make pockets.

  • Step 5: Stuff each pocket with some shredded cheese, meat and then a bit more cheese. Place pitas on the hot griddle or skeet and cook until lightly browned and crisp and cheese melts.
