Ingredients

The ingredients are:
  • 4 ounces bacon, thick cut, chopped (4 slices)
  • 6 ounces smoked sausage, sliced
  • 1 cup yellow onion, roughly chopped
  • 1 stalk celery, finely chopped
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup red bell pepper, chopped
  • 1 clove garlic, smashed
  • 6 ounces tomato paste (1 can)
  • 2 teaspoons creole seasoning
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 7 ounces tomato sauce (1 can)
  • 1 tablespoon dark brown sugar, packed
  • 14 ounces long grain white rice, uncooked, rinsed until the water runs clear (2 cups)
  • 2 cups chicken broth
  • 1 cup water
  • 1 tablespoon parsley, fresh, minced
  • 1 green onion, minced

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Pam spray 9x13 casserole.

  • Step 3: Cook bacon until crisp.

  • Step 4: Add sausage cook until brown and remove.

  • Step 5: Add onions celery and bell peppers to bacon grease.

  • Step 6: Season lightly with spices and cook until translucent.

  • Step 7: Add garlic, tomato paste (don't burn it), chicken broth, sugar and water and rice.

  • Step 8: Season to taste with spices.

  • Step 9: Add meat and pour into the casserole dish.

  • Step 10: Cover and bake for 90 minutes.

  • Step 11: Take out of oven and leave covered for 5 minutes.

  • Step 12: If the rice needs more water, add it and bake longer.

  • Step 13: Fluff and season as needed.

  • Step 14: Top with herbs.
