Step 1: Preheat oven to 350°F.
Step 2: Cook bacon until crisp, about 8 minutes; transfer bacon to a plate lined with paper towels, reserving drippings in skillet.
Step 3: Crumble bacon.
Step 4: Add yellow onion, celery, and bell pepper to reserved drippings in skillet.
Step 5: Season lightly.
Step 6: Add cayenne pepper and increase heat to medium-high.
Step 7: Cook, stirring often, until vegetables are tender, 5 to 6 minutes.
Step 8: Stir in rice and cook a bit.
Step 9: Add tomatoes, chicken broth, salt, black pepper, and hot pepper sauce and season to taste.
Step 10: Spoon into a lightly greased 2-quart baking dish. Cover with aluminum foil, and bake in preheated oven until rice is tender 45 minutes.
Step 11: Let sit out of oven covered for 5 minutes.
Step 12: Top with crumbled bacon.
