The ingredients are:
  • 3 tablespoons butter
  • 1/2 cup onions, minced
  • 1/2 cup green bell pepper, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoons flour
  • 15 ounces tomatoes, diced, undrained (1 can)
  • 15 ounces corn, undrained (1 can)
  • 14 ounces white rice, cooked (2 cups)
  • 1 teaspoon Worcestershire sauce
  • 2 ounces pimentos, undrained (1 jar)
  • 8 ounces cheddar cheese, shredded (1 cup)
  • Topping
  • 4 ounces cheddar cheese, shredded

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Pam spray 9x13 casserole.

  • Step 3: Melt butter and add onions and peppers, season lightly.

  • Step 4: Cook until translucent

  • Step 5: Add flour cook for a couple minutes.

  • Step 6: Add tomatoes, pimentos and corn and stir like crazy.

  • Step 7: Add Worcestershire sauce and cook until thickened.

  • Step 8: Add rice and season to taste.

  • Step 9: Take off heat and mix in cup of cheese.

  • Step 10: Pour into casserole top with cheese bake until bubbly and cheese is melted.
