Ingredients

The ingredients are:
  • 10 ounces yellow rice (1 package)
  • 11 ounces mexicorn, undrained (1 can)
  • 10 ounces cream of chicken soup (1 can)
  • 1/2 cup margarine, melted
  • 8 ounces cheddar cheese, shredded (1 cup)
  • Topping
  • 2 ounces cheddar cheese, shredded

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Cook the rice just like it says on the package, but without the oil. Takes about 20 minutes.

  • Step 3: Dump it in a quart size Pam sprayed casserole dish.

  • Step 4: Drain the corn juice into the empty soup can, rinse out, add to casserole.

  • Step 5: Dump in the corn, soup, butter, and cheese and stir it all up.

  • Step 6: Put cheese on top .

  • Step 7: Cook this for about 20 minutes or so at 350 degrees.
