Step 1: Preheat oven to 450º Fahrenheit.
Step 2: Line a baking sheet with parchment paper.
Step 3: Arrange the thyme sprigs in a long row on the parchment paper.
Step 4: Place salmon, skin-side down on the thyme sprigs.
Step 5: Combine the mustard, honey, and vinegar in a bowl.
Step 6: Brush the mixture evenly over the top of the salmon.
Step 7: Sprinkle the salmon with thyme leaves, salt and pepper.
Step 8: Arrange the lemon slices over the top of the salmon.
Step 9: Bake the salmon at 450º Fahrenheit in the center of the oven for 26 minutes or until the desired degree of doneness.
Step 10: Serve hot or at room temperature.
