  • 10 thyme sprigs
  • 3 pounds skin-on salmon fillet, pin bones removed
  • 1/4 cup country Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon white wine vinegar
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 lemon, very thinly sliced

How to Make

  • Step 1: Preheat oven to 450º Fahrenheit.

  • Step 2: Line a baking sheet with parchment paper.

  • Step 3: Arrange the thyme sprigs in a long row on the parchment paper.

  • Step 4: Place salmon, skin-side down on the thyme sprigs.

  • Step 5: Combine the mustard, honey, and vinegar in a bowl.

  • Step 6: Brush the mixture evenly over the top of the salmon.

  • Step 7: Sprinkle the salmon with thyme leaves, salt and pepper.

  • Step 8: Arrange the lemon slices over the top of the salmon.

  • Step 9: Bake the salmon at 450º Fahrenheit in the center of the oven for 26 minutes or until the desired degree of doneness.

  • Step 10: Serve hot or at room temperature.
