  • 1/4 ounces unflavored gelatin (Knox) (1 envelope)
  • 1 cup cranberry juice cocktail
  • 2 tablespoons lemon juice
  • 16 ounces whole cranberry sauce (1 can)
  • Top
  • 1/4 ounces unflavored gelatin (Knox) (1 envelope)
  • 3/4 cup cold water
  • 1 tablespoon soy sauce
  • 1 cup mayonnaise
  • 12 ounces chicken breast, cooked, boneless, skinless, (1 1/2 cups) diced
  • 1/4 cup almonds, coarsely chopped, toasted
  • 1/2 cup celery, diced
  • Layer
  • 8 lettuce leaves

How to Make

  • Step 1: Bottom: Sprinkle gelatin on cranberry juice cocktail in saucepan to soften.

  • Step 2: Place over low heat, stirring constantly, until gelatin is dissolved.

  • Step 3: Break up whole cranberry sauce, stir into gelatin mixture and lemon juice.

  • Step 4: Turn into a 6 cup ring mold and chill until almost firm.

  • Step 5: Top: Sprinkle the gelatin on cold water in saucepan to soften.

  • Step 6: Place over low heat, stirring constantly, until gelatin is dissolved.

  • Step 7: Remove from heat, stir in soy sauce.

  • Step 8: Cool.

  • Step 9: Gradually stir into mayonnaise until it is blended. Mix in remaining ingredients.

  • Step 10: Spoon on top of almost firm cranberry layer.

  • Step 11: Chill until firm.

  • Step 12: Unmold on salad greens.
