Step 1: Add the sugar and water to a saucepan over medium heat. Stir until the sugar is dissolved.
Step 2: Add the za’atar while the syrup is hot. Let steep for at least 3 hours. Strain out the solids and discard. The syrup will keep, covered and refrigerated, for up to 1 month.
Step 3: Place the tequila, grapefruit juice and za’atar simple syrup into a shaker with ice and shake until well-chilled.
Step 4: Strain into a Collins glass over fresh ice.
Step 5: Garnish with a lime wheel.
