Step 1: In small bowl with hand mixer, beat heavy whipping cream until stiff peaks form.
Step 2: In large bowl with hand mixer, beat cream cheese until smooth and free of lumps. Add confectioners' sugar and vanilla; mix until smooth.
Step 3: Gently fold whipped cream into cream cheese mixture until just incorporated, fold in lemon zest.
Step 4: Transfer mixture to pie dish, then smooth top with spatula. Spread cherry pie filling overtop, leaving small amount of exposed dip around edge. Chill in refrigerator at least 1 hour.
Step 5: Garnish with mint, if desired, and serve with graham crackers for dipping.
Step 6: Refrigerate any leftovers.
