  • 1 pound green peas, frozen, thawed, drained
  • 1/4 cup onion, minced
  • 4 ounces pimento, diced, drained (1 jar)
  • 6 ounces bacon, cooked, crumbled(6 slices)
  • 3 eggs, hard boiled, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons sugar
  • 2 tablespoons white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

How to Make

  • Step 1: Thaw the peas in a large bowl, then drain off any excess liquid.

  • Step 2: Add the onion, pimento, cooked bacon, chopped eggs.

  • Step 4: Blend all to combine.

  • Step 5: Add to salad, but be gentle so you don’t smash the peas.
