Step 1: Melt butter and add mushrooms and shallots, season lightly.
Step 2: Cook until softened and remove.
Step 3: Add egg mixture to the pan and add cheese.
Step 4: Cover and cook until melted.
Step 5: Add mushrooms, tomatoes, avocado, onions and sour cream.
Step 6: Fold over.
Step 7: Plate.
