  • 1/4 cup O'Brian potatoes, frozen
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Eggs
  • 3 eggs
  • 1 tablespoon water
  • 1 tablespoon butter
  • Filling
  • 2 ounces cheddar cheese, shredded
  • 2 ounces Monterey Jack cheese, shredded
  • 1/4 cup mashed potatoes, warm
  • Topping
  • 1 teaspoon chives, minced
  • 1 ounce sour cream

How to Make

  • Step 1: Heat the oil, add bacon and home fries, or O'Brien potatoes.

  • Step 2: Season lightly.

  • Step 3: Add onions mixed in potatoes cook until crisp, remove to paper towel.

  • Step 4: In another pan (or same one), beat eggs with water.

  • Step 5: Season lightly.

  • Step 6: Heat butter, pour in eggs and cook, smearing warm mashed potatoes over eggs.

  • Step 7: Add paper towel items.

  • Step 8: Add cheeses.

  • Step 9: Flip in half.

  • Step 10: Let cheeses melt.

  • Step 11: Top with sour cream and chives.
