  • 2 tablespoons honey
  • 1/2 cup ricotta
  • 2 bananas, ripe, medium
  • 8 slices banana bread, thick, day old

How to Make

  • Step 1: Stir the honey into ricotta; mash bananas with a fork and add to honey ricotta.

  • Step 2: Preheat the jaffle maker until green light switches on.

  • Step 3: Spread the banana ricotta honey cream over the 4 slices of bread and sandwich with remaining bread.

  • Step 4: Place 2 bananas and ricotta sandwich into the jaffle maker, close the lid and cook 2 minutes or until the bread is golden brown.

  • Step 5: Repeat with remaining banana bread and banana ricotta honey cream

  • Step 6: Serve warm with extra honey and sliced banana, CAREFUL as they will be piping hot, so let cool for a while.
