Step 1: Slice sausages and cut slices in 1/2.
Step 2: In a large nonstick skillet, cook sausage until lightly browned. Remove from skillet and set aside.
Step 3: In the same skillet, heat oil over medium-high heat. Saute squash, zucchini, pepper, onion, apple, garlic and salt until the vegetables are tender, 5-7 minutes.
Step 4: Meanwhile, prepare instant rice according to package directions.
Step 5: Add rice, beans, water and sausage to skillet; cook and stir until heated through, about 5 minutes, adding more water if needed.
