Ingredients

The ingredients are:
  • 6 ounces chicken sausage, spicy, about 2 links
  • 1/2 tablespoon olive oil (or use a couple sprays)
  • 1 cup yellow summer squash, chopped
  • 1 cup zucchini, chopped
  • 1/2 cup sweet red pepper, chopped
  • 1/2 cup onion, chopped
  • 1 cup apple, peeled and chopped (use a tart, firm apple)
  • 1 garlic clove, minced
  • 1/4 teaspoon salt, or to taste
  • 1/2 cup instant brown rice, dry
  • 15 ounces black beans, rinsed and drained (1 can)
  • 1/2 teaspoon chicken bouillon
  • 1/4 cup water (or chicken broth if not using bouillon), may need more

How to Make

  • Step 1: Slice sausages and cut slices in 1/2.

  • Step 2: In a large nonstick skillet, cook sausage until lightly browned. Remove from skillet and set aside.

  • Step 3: In the same skillet, heat oil over medium-high heat. Saute squash, zucchini, pepper, onion, apple, garlic and salt until the vegetables are tender, 5-7 minutes.

  • Step 4: Meanwhile, prepare instant rice according to package directions.

  • Step 5: Add rice, beans, water and sausage to skillet; cook and stir until heated through, about 5 minutes, adding more water if needed.
