Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 cup onion
  • 1/2 teaspoon thyme, chopped
  • 9 ounce artichoke hearts, frozen, thawed (1 pacakge)
  • 1 cup chicken broth
  • 1/2 cup quinoa, uncooked
  • 1 cup parsley, chopped
  • 5 teaspoons lemon rind, grated
  • 1 1/2 tablespoons lemon juice
  • 1/4 teaspoon kosher salt

How to Make

  • Step 1: In a saucepan over medium high heat heat the oil and then add the onion and thyme and saute for about 5 minutes or until onion is tender; stir in artichokes and saute for another 2 minutes or until heated.

  • Step 2: Stir in broth and quinoa and bring to a simmer; cover and cook for 15-20 minutes or until liquid is absorbed.

  • Step 3: Remove from heat and stir in parsley, lemon rind, lemon juice and the salt.

  • Step 4: Serve warm or at room temperature.
