Step 1: Melt the fat (bacon grease) in a heavy skillet over low heat.
Step 2: Add onions, peppers and garlic.
Step 3: Sauté gently, about 3 minutes or until soft and slightly browned.
Step 4: Remove garlic (or not) smash if using.
Step 5: Add remaining ingredients.
Step 6: Cover and simmer over low heat about 2 hours, or place in a slow oven (300°F) and bake 2 hours.
