Ingredients

The ingredients are:
  • 1 cup onion, sliced
  • 3 stalks celery, chopped
  • 1 1/2 tablespoons bacon grease
  • 3/4 tablespoon flour
  • 3/4 teaspoon salt, to taste
  • 3/4 cup water
  • 1 1/2 cups tomatoes (canned or fresh)
  • 1 1/2 cups peas, frozen
  • 1/2 tablespoon vinegar
  • 1/4 teaspoon sugar
  • 9 ounces shrimp, fresh, cooked, peeled (1 1/4 cups )
  • 1 1/2 tablespoons chili powder
  • 14 ounces white rice, cooked (2 cups )

How to Make

  • Step 1: Sauté onion and celery in fat (bacon grease) until browned.

  • Step 2: Stir in flour, chili powder and salt, cook briefly.

  • Step 3: Slowly add the water.

  • Step 4: Simmer for 15 minutes, stirring frequently.

  • Step 5: Add tomatoes, peas, vinegar, sugar, shrimp, and continue cooking for 10 minutes longer.

  • Step 6: Place rice in a large deep serving plate, and pour creole mixture over it.
