The ingredients are:
  • 1 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup quick-cooking oats (not substitutes, only quick-cooking!)
  • 1 banana, mashed (medium banana, about 1 cup or a little more)
  • 2 large eggs
  • 1/2 cup oil (vegetable oil, can use canola oil)
  • 2 teaspoons vanilla extract
  • 1 cup blueberries (fresh, tossed with 1 tablespoons all-purpose flour)

How to Make

  • Step 1: Preheat oven to 350 degrees F. Set oven rack to second-lowest position. Grease and flour an 8 x 5-inch loaf pan.

  • Step 2: In a bowl combine the flour with next 5 ingredients. In a small bowl whisk the eggs with oil and vanilla until well combined then mix in the mashed bananas; add to the dry ingredients mixing with a wooden spoon until just combined. Gently mix in the blueberries.

  • Step 3: Transfer to loaf pan. Bake for about 1 hour and 10 minutes or until the loaf tests done. Cool 10 minutes in the pan then remove to a wire rack to cool completely.
