Ingredients

  • Sauce
  • 1 pound ground beef
  • 15 ounces whole, ripe black olives, pitted, drained (1 can)
  • 15 ounces stewed tomatoes (1 can)
  • 7 ounces tomato sauce, hot (1 can)
  • 1/4 teaspoon tabasco sauce
  • 1 ounce dry enchilada mix(1 package)
  • Cheese
  • 12 ounces cottage cheese, small curd (1 container)
  • 1 egg
  • 1/2 pound Monterey Jack cheese, grated
  • 8 ounces cheddar cheese, shredded (1 cup)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, to taste
  • Topping
  • 8 ounces tortilla chips (1 bag)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Brown ground beef and season lightly.

  • Step 3: Stir in stewed tomatoes, sauce, olives, and enchilada mix.

  • Step 4: Warm over low heat.

  • Step 5: Beat egg and add to cottage cheese.

  • Step 6: In a Pam sprayed casserole dish, spread some meat sauce.

  • Step 7: Top with 1/2 of the grated Monterey Jack cheese, and 1/2 cottage cheese.

  • Step 8: Top with layer of chips.

  • Step 9: Repeat layers.

  • Step 10: Top with grated Cheddar cheese.

  • Step 11: Garnish with broken tortilla chips.

  • Step 12: Bake, uncovered, at 350 degrees for 30 minutes.
