Step 1: Preheat oven to 350 degrees F.
Step 2: Brown ground beef and season lightly.
Step 3: Stir in stewed tomatoes, sauce, olives, and enchilada mix.
Step 4: Warm over low heat.
Step 5: Beat egg and add to cottage cheese.
Step 6: In a Pam sprayed casserole dish, spread some meat sauce.
Step 7: Top with 1/2 of the grated Monterey Jack cheese, and 1/2 cottage cheese.
Step 8: Top with layer of chips.
Step 9: Repeat layers.
Step 10: Top with grated Cheddar cheese.
Step 11: Garnish with broken tortilla chips.
Step 12: Bake, uncovered, at 350 degrees for 30 minutes.
