  • 8 ounces ditalini pasta, dry
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Soup
  • 1 pound Italian sausage
  • 1 cup onions, diced
  • 1 garlic clove, smashed
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 15 ounces cannelloni beans, undrained (1 can)
  • 28 ounces tomatoes, diced (1 can)
  • 6 cups chicken broth
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 2 ounces parmesan cheese, grated

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente, drain.

  • Step 2: In stock pot, sauté Italian sausage, onions and garlic.

  • Step 3: Season lightly.

  • Step 4: Add white beans, diced tomatoes, chicken broth, oregano and parsley.

  • Step 5: Simmer for 30 minutes.

  • Step 6: Stir in cooked and drained ditalini.

  • Step 7: Simmer 10 minutes more.

  • Step 8: Add Parmesan cheese off heat.

  • Step 9: Season to taste.
