Ingredients

The ingredients are:
  • 1 cup walnuts or pecans, chopped
  • 1/2 cup balsamic vinegar
  • 1/3 cup blueberry preserves
  • 1/3 cup olive oil
  • 11 ounces spring greens and baby spinach mix
  • 2 cups fresh blueberries
  • 1 red onion, small, halved and sliced
  • 1 cup blue cheese, crumbled

How to Make

  • Step 1: Heat walnuts or pecans in a small skillet over medium high heat, stirring constantly, 5 minutes or until toasted and fragrant.

  • Step 2: Whisk together the balsamic vinegar, blueberry preserves, olive oil, and salt and pepper to taste in a small bowl.

  • Step 3: Combine the walnuts, spinach and spring green mix, blueberries red onion, and blue cheese in a large bowl. Drizzle with desired amount of vinaigrette, and toss to combine.

  • Step 4: Serve immediately with the remaining vinaigrette.
