  • 1 cup mango, diced
  • 1 avocado, cut into cubes
  • 15 ounces black beans, drained, rinsed (1 can)
  • 15 ounces corn (1 can)
  • 1 cucumber, peeled, sliced
  • 1/4 cup green onions, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika
  • Cilantro Salad Dressing
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon coarsely ground pepper
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 2 tablespoons cilantro, finely chopped

How to Make

  • Step 1: Drain off the liquid from the canned beans and corn and rinse.

  • Step 2: Cut the avocado into half, remove the seed and peel.

  • Step 3: Cut the avocado into cubes.

  • Step 4: Drizzle lemon juice over the avocado cubes and toss gently.

  • Step 5: This prevents the avocado from turning black.

  • Step 6: Cut the mango into half.

  • Step 7: Peel and cut the flesh into cubes.

  • Step 8: Mix all the ingredients for the salad in a big bowl. Sprinkle paprika to taste .

  • Step 9: Mix well.

  • Dressing:

  • Step 10: Add olive oil, lime and lemon juice, salt, pepper together in a jar.
