  • 3/4 cup canola oil
  • 1 teaspoon lemon juice
  • 2 cups sugar
  • 4 eggs
  • 2 cups carrots, grated

How to Make

  • Step 1: Preheat the oven to 350 degrees.

  • Step 2: Butter a Bundt Pan.

  • Step 3: Spray a Bundt pan with cooking spray.

  • Step 4: In a bowl, whisk together the flour, cinnamon, baking soda and salt.

  • Step 5: In a another bowl, combine the oil, lemon juice sugar, eggs and carrots, and mix well.

  • Step 6: Add the flour mixture and stir until smooth.

  • Step 7: Pour the batter into the prepared pan.

  • Step 8: Bake until a tester comes out clean, about 1 hour. Cool in the pan 2 minutes, then turn the cake out onto a rack to finish cooling.
