  • 3 tablespoons olive oil
  • 1 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup red bell pepper, finely chopped
  • 1 cup green bell pepper, finely chopped
  • 28 ounces diced tomatoes (1 can)
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 eggs
  • 1 tablespoon fresh parsley, minced
  • 1 ounce parmesan cheese, grated
  • 1 ounce mozzarella cheese, shredded

How to Make

  • Step 1: Preheat your oven to 375°F .

  • Step 2: Heat olive oil in a large oven-safe skillet over medium heat.

  • Step 3: Add the onions and sauté until translucent.

  • Step 4: Stir in the chopped bell peppers and cook until they begin to soften, about 5 minutes.

  • Step 5: Add the minced garlic and paprika, cook for another minute.

  • Step 6: Add the diced tomatoes, salt, and black pepper to taste.

  • Step 7: Simmer the mixture for 10-15 minutes until the sauce thickens.

  • Step 8: Make four wells in the sauce using the back of a spoon. Crack an egg into each well.

  • Step 9: Transfer the skillet to the preheated oven and bake for about 10-15 minutes, or until the egg whites are set and yolks are cooked to your desired level of doneness.

  • Step 10: Remove the skillet from the oven and garnish with chopped fresh parsley and cheeses.
