Ingredients

The ingredients are:
  • Sauce
  • 1/2 cup water
  • 1 cup cilantro, chopped
  • 1 avocado, fresh
  • 3 green onions
  • 1/2 serrano chili, with seeds
  • 2 ounces sour cream (1/4 cup)
  • 1/4 cup lime juice
  • 1 teaspoon salt
  • 1 teaspoon garlic, smashed
  • 1/2 teaspoon cumin, ground
  • Sandwiches
  • 8 ounces ciabatta bread (1 loaf)
  • 2 pounds boneless skinless chicken breasts (4)
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 2 tomatoes, vine ripe, sliced
  • 4 leaves red leaf lettuce
  • 1/2 cup cilantro, minced
  • 2 avocados, sliced
  • 2 tablespoons pickled jalapeno slices
  • 4 ounces pepper jack cheese (4 slices)

How to Make

  • Step 1: Sauce: Combine all ingredients in blender and puree until smooth.

  • Step 2: Set aside.

  • Step 3: Sandwiche Assembly: Slice bread into 8 slices.

  • Step 4: Toast Kneaders Ciabatta on griddle or in broiler for 3-4 minutes or until golden brown and set aside.

  • Step 5: Pound chicken breast and season to taste.

  • Step 6: In a large sauté pan, place 1 tablespoon oil and place seasoned chicken in pan.

  • Step 7: Cook chicken 4-5 minutes on both sides or until fully cooked.

  • Step 8: Add cheese and allow to melt.

  • Step 9: This step could also be done in a 400 degree oven. Place approximately 2 tablespoons of the Spicy Cilantro Avocado Sauce on toasted bread.

  • Step 10: Add chicken/cheese on top.

  • Step 11: Lay pickled jalapenos slices on top and add the tomatoes, lettuce and avocado.

  • Step 12: Place the top of the bread on top and slice in half.
