Ingredients

The ingredients are:
  • 2 cups flour
  • 1/2 cup sugar
  • 8 tablespoons butter (very cold)
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cardamom, ground
  • 4 ounces sour cream (1/2 cup)
  • 4 ounces heavy cream (1/2 cup)
  • Garnish:
  • 1 ounce heavy cream, for brushing on the scones (2 tablespoons)
  • 2 tablespoons sugar
  • 1/4 teaspoon cardamom, ground
  • Cardamom Glaze:
  • 1 cup powdered sugar, sifted
  • 1/2 teaspoon cardamom, ground
  • 1 ounce heavy cream

How to Make

  • Step 1: Add the dry ingredients to a large mixing bowl and grate the butter.

  • Step 2: With your fingertips, incorporate the chunks of butter into the flour mixture until well incorporated

  • Step 3: Be careful not to add more moisture!

  • Step 4: Dump the scone dough onto the prepared baking sheet and gently knead it into a ball.

  • Step 5: Press down until the scones are about 1 inch tall and chill for 30 minutes in the fridge.

  • Step 6: While the scones are chilling, preheat the oven to 400 F.

  • Step 7: Remove the scones from the fridge, slice into 8-10 wedges and separate on the tray to avoid touching as they rise.

  • Step 8: Lightly brush the tops of the scones with cream, then sprinkle with mixed cardamom sugar.

  • Step 9: Bake for 18-20 minutes.

  • Step 10: When done, the scones will be golden brown on the bottoms.

  • Step 11: Allow the scones to cool on the tray as you prepare the glaze.

  • Step 12: For the best appearance, let the scones cool at least 15-20 minutes before glazing.

  • Step 13: To make the glaze: Sift sugar and cardamom together.

  • Step 14: Whisk together half of the powdered sugar mixture with the heavy cream .

  • Step 15: Once the mixture starts to come together, add the remaining powdered sugar.

  • Step 16: Adding enough cream to drizzle.

  • Step 17: Drizzle the glaze over the scones.
