  • 2/3 cup orzo, uncooked
  • 1 teaspoon unsalted butter
  • 1 1/2 cups fresh spinach, washed, drained and coarsely chopped
  • 1 clove garlic, peeled and minced
  • 3 tablespoons nonfat milk
  • 2 tablespoons gated Parmesan cheese
  • 1 1/2 teaspoons fresh oregano, chopped (or 1/2 teaspoon dried)
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon sesame seeds, toasted

How to Make

  • Step 1: Cook orzo pasta according to package directions, omitting salt. Drain and set aside.

  • Step 2: Melt butter in a medium skillet over medium heat. Add spinach and garlic; cook over medium heat until spinach is wilted.

  • Step 3: Stir in milk, cheese, oregano, paprika, pepper and pasta. Cook over low heat until heated through.

  • Step 4: Sprinkle with sesame seeds and serve immediately.
