  • 18 ounces cheese tortellini, refrigerated (2 packages)
  • 1 pound chicken breast cutlets (4 4-ounce chicken cutlets)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup pecans, finely chopped
  • 1 egg, large, lightly beaten
  • 3 tablespoons olive oil
  • 1/2 cup butter
  • 3 garlic cloves, thinly sliced
  • 3 tablespoons basil, fresh, chopped
  • 3 tablespoons parsley, fresh, chopped
  • 1/4 cup Parmesan cheese, shredded

How to Make

  • Step 1: Prepare the tortellini according to the package instructions.

  • Step 2: Meanwhile, sprinkle the chicken with salt and pepper. Place the pecans in a shallow bowl. Place the egg in a separate bowl. Dip the chicken in the egg, allowing the extra to drip off. Dredge the chicken through the pecan pieces, pressing firmly to adhere.

  • Step 3: Cook the chicken in hot oil in a large nonstick skillet over medium-high heat 2 minutes on each side or until the chicken is done. Remove the chicken from the skillet and set aside. Wipe the skillet clean.

  • Step 4: Melt the butter over medium heat in the same skillet. Add the garlic, and saute for 5 to 7 minutes or until the garlic is caramel colored and the butter begins to turn golden brown. Immediately remove from heat, and stir in basil, parsley, and hot cooked tortellini. Sprinkle with the cheese. Serve immediately with the chicken.
