  • 1 jalapeno pepper, small, seeded and diced
  • 2 tablespoons basil, fresh, chopped
  • 2 tablespoons red onion, chopped
  • 2 teaspoons lime juice, fresh
  • 3/4 teaspoon salt, divided
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cumin, ground
  • 1 pound chicken breast cutlets (4 4-ounce cutlets)
  • 2 teaspoons olive oil

How to Make

  • Step 1: Stir together the plums, next 4 ingredients, and 1/4 tsp salt in a medium bowl.

  • Step 2: Stir together the brown sugar, cumin, and remaining 1/2 tsp salt in a small bowl. Rub the chicken with the brown sugar mixture.

  • Step 3: Cook the chicken in hot oil on a grill pan or nonstick skillet over medium heat, 3 minutes on each side or until done. Serve with the plum salsa.
