  • 3 tablespoons soy sauce, low-sodium
  • 2 tablespoons honey
  • 2 tablespoons hot water
  • 2 tablespoons lime juice, fresh
  • 1 tablespoon canola oil
  • 1 tablespoon gingerroot, fresh, grated
  • 2 garlic cloves, grated
  • 8 chicken drumsticks, skinned (about 2 pounds)
  • 3/4 teaspoon black pepper, freshly ground, divided
  • Cooking spray
  • 12 ounces snow peas, microwave-in-bag (2 packages)
  • 8.5 ounce brown rice, pre-cooked (1 pouch)
  • 1 teaspoon lime zest, grated
  • 1/8 teaspoon salt

How to Make

  • Step 1: Preheat the oven to 350º.

  • Step 2: Combine the soy sauce and next 6 ingredients (through garlic), in a small bowl, stirring with a whisk.

  • Step 3: Cut a 1-inch deep slit in the meaty end of each drumstick. Sprinkle with 1/2 teaspoon pepper. Heat an oven-proof skillet over medium-high heat. Coat the pan with cooking spray. Add the drumsticks; cook 4 minutes, browning on each side. Add the sauce, turn to coat. Place the pan in the oven. Bake at 375º for 15 minutes, turning occasionally.

  • Step 4: Prepare the snow peas according to the package directions. Prepare the rice according to the package directions. Combine the snow peas. rice, remaining 1/4 teaspoon pepper, zest, and salt in a bowl.

  • Step 5: Drizzle any remaining soy sauce mixture over the drumsticks and serve with the rice and snow peas.
