Ingredients

The ingredients are:
  • 2 pounds ground chicken
  • 2 eggs
  • 1/2 cup freshly grated Pecorino Romano cheese
  • 1 cup almond flour (for gluten free option or use bread crumbs in its place)
  • 1 1/2 tablespoons chopped Italian parsley
  • Zest from 1 lemon
  • 1 cup, plus 2 tablespoons good quality olive oil
  • 2 teaspoons oregano, dried
  • 2 teaspoons garlic powder
  • 1 teaspoon red pepper flakes
  • 1 1/2 teaspoon Kosher or sea salt
  • 1 teaspoon pepper, freshly ground

How to Make

  • Step 1: Add ground chicken to a large bowl. Add all remaining ingredients listed. Using your hands, blend ingredients together. Shape into 1 1/2 - 2 inch balls.

  • Step 2: Heat oil in a large sauté pan. When oil is hot but not smoking, fry meatballs in batches. When the bottom half of the meatball is very brown and slightly crisp, turn and cook top half. Remove from heat and drain on paper towels.

  • Step 3: You can serve these on their own with a side of choice (like pasta, salad, etc.) or you can add them to a pot of a simmering marinara tomato sauce and cook for about 15 minutes. Enjoy
