Ingredients

The ingredients are:
  • 1 pound skirt steak
  • Kosher salt
  • Pepper
  • Olive oil
  • 1/2 onion, thinly sliced
  • 1 green bell pepper, seeded and thinly sliced
  • 1 baguette (12-14 inch)
  • 1 ounce blue cheese, crumbled (about 1/4 cup)

How to Make

  • Step 1: On high heat, heat a large cast iron skillet.

  • Step 2: Sprinkle 1 teaspoon salt on the steak and then sprinkle it with pepper.

  • Step 3: Place oil in the skillet, using enough to coat bottom of skillet and then heat it until it is almost smoking and then add the steak; cooking, turning once (3-5 minutes per side) until it is seared and cooked to your liking. Transfer steak to cutting board.

  • Step 4: Reduce heat to low.

  • Step 5: If skillet to dry you may need to add more oil and then add the onion and green pepper; cook, stirring occasionally until soft (10-15 minutes); season with 1/2 teaspoon salt.

  • Step 6: While the vegetable are cooking preheat oven to broil (low broil if possible).

  • Step 7: Trim ends of the baguette and then cut in half lengthwise. Brush cut sides with olive oil and place on a foil lined sheet pan. Broil bread until golden (1-5 minutes).

  • Step 8: Slice steak across the grin and layer it on the bottom half of the baguette; top with onion and green pepper and then add the cheese. Return to broiler and heat until cheese melts (a minute or so).

  • Step 9: Add the top half of the baguette and then cut into quarters to make 4 sandwiches.
