Ingredients

The ingredients are:
  • Green Chili Paste
  • 1 1/2 preserved lemons, small, seeds discarded, skin and flesh roughly chopped (1/4 cup)
  • 2 green chiles, seeded and chopped
  • 2 garlic cloves, passed through a garlic press
  • 2 1/2 tbsp olive oil
  • 2/3 cup Greek-style yogurt
  • 1/2 cup mint leaves, finely shredded
  • 1 tablespoon lemon juice
  • 2 teaspoons cumin seeds, toasted and finely crushed
  • 1 English cucumber, quartered lengthwise, seeded, and flesh cut into 1/2 inch dice (2 cups)
  • 1/2 onion, finely chopped (1/2 cup)
  • 7 ounces cherry tomatoes, quartered
  • Salt, to taste

How to Make

  • Step 1: Place all the ingredients for the chile paste in the bowl of a food processor, with 1/4 teaspoon of salt. Blitz to form a rough paste and set aside.

  • Step 2: Put the yogurt in a bowl and whisk with the mint, lemon juice, 1 1/2 teaspoons of the cumin seeds, and rounded 1/4 teaspoon salt.

  • Step 3: Add the cucumber, onion, and tomatoes and stir gently.

  • Step 4: Transfer to a shallow bowl and top with chile paste.

  • Step 5: Swirl lightly, sprinkle with the remaining 1/2 teaspoon of cumin seeds and serve.
