Step 1: Heat a nonstick skillet over medium heat. Add oil to the pan. Arrange 4 bread slices in the pan. Layer cheese, prosciutto, and chicken over slices.
Step 2: Combine sour cream and mustard in a bowl; spread over the remaining 4 slices. Top sandwiches in the pan with the bread slices, sour cream side down.
Step 3: Cook 3 minutes. Turn over; cook 2 to 3 minutes or until golden brown. Transfer to a cutting board. Spread butter evenly over the tops of sandwiches; sprinkle evenly with thyme. Cut in half and serve.
