Step 1: Empty 1 can salmon WITH JUICE into large mixing bowl (remove bones). Add garlic, 2 eggs, lemon juice. Stir mixture well. Mix in onion. Season with pepper. Mix in baking powder and crushed crackers. Season with salt.
Step 2: Form into patties about 1-inch thick. Set aside on plate for 15 minutes (make 5-6 patties).
Step 3: In large frying pan heat 1/2-1 inch olive oil to medium-high heat (Do not skimp on oil) When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through and are well browned on the outside. Center should be hot.
