Ingredients

The ingredients are:
  • 1 can (14 3/4 ounce) red salmon (DO NOT drain the juice from the salmon)
  • 1 garlic clove, minced
  • 1 yellow onion, chopped(small onion)
  • 2 large eggs (beaten)
  • 1 teaspoon ground pepper
  • 1/2 teaspoon baking powder
  • 2 teaspoons fresh lemon juice
  • 1 1/2 to 2 cups crushed saltine crackers (or panko breadcrumbs - or as much as you need to hold the mixture together)
  • Salt
  • Olive oil

How to Make

  • Step 1: Empty 1 can salmon WITH JUICE into large mixing bowl (remove bones). Add garlic, 2 eggs, lemon juice. Stir mixture well. Mix in onion. Season with pepper. Mix in baking powder and crushed crackers. Season with salt.

  • Step 2: Form into patties about 1-inch thick. Set aside on plate for 15 minutes (make 5-6 patties).

  • Step 3: In large frying pan heat 1/2-1 inch olive oil to medium-high heat (Do not skimp on oil) When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through and are well browned on the outside. Center should be hot.
