Ingredients

The ingredients are:
  • 800 grams chicken thighs, boneless, cubed
  • 1 teaspoon salt
  • 100 grams ginger-garlic paste
  • 1-inch piece cinnamon
  • 4 cloves
  • 4 cardamom
  • 120 grams ghee
  • 300 grams onions, sliced
  • 300 grams baby onions , halved
  • 20 grams chilli powder
  • 20 grams turmeric powder
  • 200 grams tomatoes, finely chopped
  • 160 grams yoghurt
  • 60 grams cashew paste
  • 8 oranges, 4 juiced and 4 diced
  • 5 grams garam masala powder
  • 10 grams aniseed powder (saunf)
  • 5 grams ginger powder
  • 20 grams ginger, julienned
  • Lime wedges to garnish
  • Mint sprigs to garnish

How to Make

  • Step 1: Dice the chicken and marinate with salt and ginger-garlic paste. Keep aside for an hour.

  • Step 2: Temper the cinnamon, cloves and cardamom in ghee. Add sliced onions and baby onions. Add chilli powder, turmeric and fry for 2 minutes. Add the chicken and sear well. Then add the chopped tomatoes and cook till the chicken is done, about 25 minutes.

  • Step 3: Add in the yoghurt, cashew paste and orange juice. Add garam masala powder, saunf and ginger powder.

  • Step 4: Serve hot garnished with the ginger juliennes, orange dices and mint sprigs accompanied with lime wedges.
