Ingredients

The ingredients are:
  • 3 cups chicken broth
  • 2 ounces dry white rice (long-grain, or can use 3 ounces, see recipe heading)
  • 2 large eggs
  • 3 tablespoons fresh lemon juice (or more if you like)
  • Salt & white pepper

How to Make

  • Step 1: In 2-quart saucepan, bring broth to a boil. Reduce heat add rice cover and simmer until rice is tender, about 20 minutes. In small bowl, beat eggs and lemon juice. heat. Do not boil!

  • Step 2: Stirring constantly, add 1 cup of hot soup, a little at a time. Stir mixture into soup in pan and heat. Do not boil! Season with salt and pepper. Serve immediately
