Ingredients

The ingredients are:
  • Cheese Topping
  • 2-3 teaspoons serrano or jalapeƱo peppers, finely chopped
  • 3 scallions, both white and green parts, chopped (you need 1/2 cup)
  • 2 cups white cheddar cheese, grated
  • Pepper
  • Garlic Butter
  • 2 tablespoons butter, room temperature
  • 1 garlic clove, minced (about 2 teaspoons)
  • 4 slices of sandwich bread (4 x 4 inch)
  • Dried chili flakes, garnish

How to Make

  • Step 1: Preheat broiler.

  • Step 2: In a bowl combine the first 3 ingredients (chili pepper - cheddar) plus a few grinds of pepper; mix well and set aside.

  • Step 3: To make the garlic butter: in a bowl combine the butter with the garlic, mix well.

  • Step 4: To assemble the toasts: on one side of 4 slices of bread, spread half of the butter and then place the bread slices on a baking sheet, buttered side up and broil until golden brown (2 minutes); remove from oven and place baking sheet on a heat proof surface.

  • Step 5: Flip the bread slices and butter the other side. Divide the cheese and scallion mixture equally among the buttered slices, pressing it into the bread. Broil for 2 minutes or until cheese is bubbly. Remove from oven and cut each slice diagonally and sprinkle with the red chili flakes.

  • Step 6: Delicious with a bowl of tomato soup!
