Ingredients

The ingredients are:
  • 1 1/3 cups basmati rice
  • 1 tablespoon cooking oil
  • 1 stick of cinnamon (3 inch)
  • 3 whole cloves
  • 1 star anise
  • 1 bay leaf
  • 3/4 cup onion, sliced thin (1 medium onion)
  • 1/2 teaspoon turmeric, ground
  • 1/8 teaspoon pepper
  • 1/2 teaspoon sea salt
  • 2 cups water
  • 1/2 cup frozen peas, thawed

How to Make

  • Step 1: Rinse the rice in a bowl of water and then pour it through a fine mesh strainer and set aside to drain.

  • Step 2: In a large saucepan on medium high heat, heat the oil and then add the spices (cinnamon -bay leaf), stirring until fragrant (1 minute).

  • Step 3: Stir in the onion, stirring until it begins to brown on the edges (3-5 minutes).

  • Step 4: Stir in the turmeric, pepper and salt, stir for about 30 seconds or until fragrant.

  • Step 5: Stir in rice and water and bring to boil over high heat; reduce heat to low, tightly cover pot and cook undisturbed for 20 minutes.

  • Step 6: Lift the lid and add the peas. Replace lid. Remove from heat and let rice sit for 10 minutes.

  • Step 7: Fluff rice; remove spices if desired or leave them in the finished dish.

  • Step 8: Serve.
