  • 2 tablespoons sesame oil
  • 1 tablespoon oil
  • 1 cup carrot, julienned
  • 3 green onions, sliced in 1-inch pieces
  • 1 cup mushrooms, sliced
  • 1/2 cup sliced water chestnuts, drained
  • 1/2 pound shrimp, peeled
  • 1 pound bean sprouts
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon garlic, smashed
  • Slurry
  • 1 tablespoon cornstarch
  • 1 teaspoon brown sugar
  • 2 tablespoons soy sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper

How to Make

  • Step 1: Mix the brown sugar and cornstarch into the soy sauce and mix until dissolved.

  • Step 2: Add shrimp and set aside.

  • Step 3: In a wok, heat the oil on medium high.

  • Step 4: Saute carrots, green onions, and mushrooms, just until tender.

  • Step 5: Add the ginger and garlic.

  • Step 6: Season with salt and pepper to taste.

  • Step 7: Stir until well mixed.

  • Step 8: Add the shrimp and soy sauce mixture and saute 3-5 minutes until the shrimp are cooked through.

  • Step 9: Add bean sprouts and stir until heated through, as these don't take long.

  • Step 10: Just be sure not to overcook the bean sprouts, they are best when still crunchy.
