Step 1: Mix the brown sugar and cornstarch into the soy sauce and mix until dissolved.
Step 2: Add shrimp and set aside.
Step 3: In a wok, heat the oil on medium high.
Step 4: Saute carrots, green onions, and mushrooms, just until tender.
Step 5: Add the ginger and garlic.
Step 6: Season with salt and pepper to taste.
Step 7: Stir until well mixed.
Step 8: Add the shrimp and soy sauce mixture and saute 3-5 minutes until the shrimp are cooked through.
Step 9: Add bean sprouts and stir until heated through, as these don't take long.
Step 10: Just be sure not to overcook the bean sprouts, they are best when still crunchy.
